I recently decided that it was about time that I tried out some new recipes from the various cookbooks I have bought over the years. The result has been that I am enjoying my meals more than I have done for a long time! (Without realising it, I had become really stuck in my cooking routine).
As they are not my own recipes I can’t share the full thing, but I thought it useful to post a photo and a list of the ingredients, together with source details, so that you can check it out further should you wish.
This yummy recipe is quick and easy and the Crispy Gnocchi with Roasted Peppers, Chilli, Rosemary and Ricotta is definitely now on my list of favourite mid-week meals.
Ingredients (for 2 large portions):
500g gnocchi
500g mixed, chopped peppers
200g halved baby tomatoes
2 tablespoons olive oil
2 bay leaves
2 cloves garlic
1 teaspoon chilli flakes
2 large sprigs rosemary
1 teaspoon salt
freshly ground black pepper
4 tablespoons ricotta
A handful of chopped parsley
